It’s that time of the year again! Winter makes us want to stay inside more and reach for heavy, rich, sugary and creamy food. Because cold weather stimulates our survival impulse and eating makes us warmer and feeling good so we tend to eat more in winter. We have stronger cravings and an increased urge to snack in winter especially in the evening and this can lead to unwanted weight gain.
What is the solution then?
It is a good idea to choose a better and healthier snack which is low in calories and highly nutritious. When you eat this you will be eating a guilt-free snack. Kale is highly nutritious and high in fiber. It has been described as of the wonder foods! Unfortunately we don’t consume it as much as we should so here is an idea to make the most of this amazing vegetable in winter.
Try these kale chips and share them with your family and friends.
1 head kale, washed and thoroughly dried
2 tablespoon olive oil or coconut oil (optional)
½-1 tbs gluten-free soy sauce (optional)
A pinch of Salt (optional)
Remove the ribs from the kale and cut or tear into 2-3 cm pieces. Place them on the microwave-safe plate and toss with olive oil (if you have decided to use oil) or you can do this without any oil. Cook in the microwave for 5 minutes, then turn over the pieces and if you have chosen not to use the olive oil, now you can drizzle some gluten-free soy sauce on the kale and put back in the microwave for another 2-3 minutes.
Serve as finger food, snack or side dish. It can be stored in an airtight container for a few days.
Tip: after a couple of days it might not be as crispy as the first day you made it. If so just put the plate of kale back in the microwave for 1-2 minutes to becomes fresh and crisp again.
